BR Cohn '19 North Coast Petite Sirah
This Petite Sirah has a deep, inky color that is characteristic of this grape. On the nose, it offers an enticing bouquet of dark fruit, including blackberry, black cherry, and black currant, as well as notes of chocolate, coffee, and vanilla. The palate is full-bodied and rich, with a velvety texture and firm tannins that give it structure and depth. The flavors are intense and concentrated, with a core of black fruit that is complemented by hints of licorice, spice, and tobacco. The finish is long and satisfying, with a lingering sweetness that is balanced by a touch of acidity. This is a wine that will age beautifully, developing even more complexity and depth over time.
Once harvested we crush into glycol jacketed stainless steel tanks to begin fermentation. We heat up to an ideal fermentation temperature and perform pumpovers at least twice a day during primary fermentation. Once primary fermentation is complete we barrel the wine down to French oak barrels to complete malolactic fermentation. The wine is racked a couple of times to "clean up" the wine and allow homogenous blending then put back down to French oak and allow the wine to age till ready for bottling. We blend a small amount of Zinfandel into the Petite Sirah to help calm the bold tannin of the wine and add some spicier components.
