2021 Cabernet Sauvignon, Select Block 7, Olive Hill Estate, Sonoma Valley

Opens with enticing and decadent aromas of vanilla, blackberries and toasted oak. Fruit takes center stage on the palate, with intense flavors of plum, raisins and cloves. The round mid-palate continues with notes of créme, leading to chocolate and toffee on the rich, lengthy finish. This wine can be aged many years or paired now with hearty beef dishes, spicy pork loin or a rich, dark chocolate.

Block 7 is home to the oldest of the ENTAV clones at B.R. Cohn, planted in 1989 on the top of Oak Hill below Sonoma Mountain. The block has very good drainage, reliable breezes off the mountain and sparse, rocky soil. These conditions provide enough stress to produce low yields of small, concentrated berries with powerful aromas and flavors.
