2019 Cabernet Sauvignon, Select Block 7, Olive Hill Estate, Sonoma Valley
This limited-production Cabernet Sauvignon displays a deep ruby color with a vibrant and enticing nose of crushed wild blackberries, dark red fruits, cassis, and chocolate, underscored with a hint of vanilla. On the palate, the wine is full-bodied and well-structured, with firm tannins framing a rich and complex core of black fruit flavors, accented by notes of graphite and leather. The finish is long and persistent, revealing a touch of spice and a pleasing minerality. This wine is balanced and elegant, with great aging potential, and will pair well with hearty meat dishes or robust cheeses. Enjoy now or cellar for up to 10 years to further develop its complexity and depth.
Block 7 is home to the oldest of the ENTAV clones at B.R. Cohn, planted in 1989 on the top of Oak Hill below Sonoma Mountain. The block has very good drainage, reliable breezes off the mountain and sparse, rocky soil. These conditions provide enough stress to produce low yields of small, concentrated berries with powerful aromas and flavors.
